Grilled Steak with Salsa Sauce

This meal was so yummy! I have never tried salsa with my steak before, and I never dip my steak into anything because I think it ruins the steak :) but after I tried this I think I might start dipping my steak in salsa :) 

With this meal I served a spinach salad, some cottage fries, and for dessert grilled ginger pineapples.








Grilled Steak with Salsa Sauce


Prep Time: 10 minutes
Total Time: 30 minutes
Cook Time: 20 minutes
Serves : 4

Ingredients
  • 3/4 cup salsa
  • 5 tablespoons sour cream
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon garlic powder
  • 1 pound beef, top sirloin steak, lean, raw, 1/8" trim

Preparation
  • Mix salsa and sour cream; refrigerate until ready to serve.
  • Season steaks with pepper and garlic powder.
  • Grill the steaks 4 to 5 minutes each side, turning once, for medium-rare, or longer to desired doneness.
  • Transfer the steaks to a cutting board and let rest for 5 minutes; slice on the diagonal into 1/2-inch thick slices.
  • Spoon the salsa mixture onto a plate and place the steak slices, slightly overlapping, on top.
  • Divide evenly among 4 plates.

Spinach Salad
Prep Time: 10 minutes
Total Time: 10 minutes
Cook Time: 0 minutes
Serves : 4

Ingredients
  • 16 tomatoes, cherry
  • 5 cups spinach, fresh, chopped
  • 1 cup mushrooms, sliced
  • 2 tablespoons salad dressing, ranch, reduced fat
  • 1/4 cup balsamic vinegar



Preparation

  • Halve tomatoes and toss with spinach and mushrooms.
  • Drizzle with dressing and vinegar.
  • Divide evenly among 4 plates.

Cottage Fries
Okay, so with these. I haven't heard of them before so I googled it. I guess you can buy them in the frozen isle with all of the other frozen fry things. Since we are limited here and don't have a whole lot of things I had to make my own. All I did was cut potatoes as thin as I could and baked them at about 350 for about 10-12 min. I sprinkled with some Mrs. Dash seasoning to give them a little flavor.



Grilled Ginger Pineapple
Prep Time: 10 minutes
Total Time: 20 minutes
Cook Time: 10 minutes
Serves : 4

Ingredients
  • 8 pieces pineapple, slices, canned in water
  • 4 teaspoons brown sugar, packed
  • 1 teaspoon ginger, fresh, chopped



Preparation

  • Top pineapple with equally divided sugar and ginger. Place under broiler and cook until sugar begins to carmelize.
  • Serve each person 2 pineapple slices for dessert.

*CE* Hearty Vegetable-Miso Soup

Hearty Vegetable-Miso Soup


What you need
1 tsp. extra virgin olive oil, or safflower oil
2 Tbsp. finely chopped yellow onion
1 tsp. finely chopped garlic
1 small carrot, cut in thin diagonal slices
1 small celery stalk, cut into diagonal slices
1/2 tsp. peeled and finely grated ginger
2 cups water
1/4 cup broccoli florets
2 Tbsp. chopped fresh green beans
1/4 cup shredded Napa cabbage or bok choy
1 Tbsp. wakame seaweed
1/2 tsp. toasted sesame oil
1 Tbsp.sliced green onion
1 Tbsp. miso mixed with 2 bsp. hot water (add more miso to taste) 
(I added about 1/4 c. tofu to mine)

Directions
Heat oil in soup pot on medium heat. Add onion, garlic, ginger, carrot, and celery and saute for 5 min until fragrant. Add water and simmer on low for 20 min until veggies are tender. Add broccoli, beans, cabbage, and seaweed. Stir and simmer until tender but not overcooked; broccoli and beans should remain crisp. Remove from heat and add sesame oil, green onion and miso mixture.
Stir and enjoy.

This makes 1 serving

*CE* Asian Stir-Fry

The *CE* means Clean Eats. 

This dinner takes like 10 minutes to cook. If you have you veggies already cut up, it makes it that much faster!! 
   

Asian Stir- Fry



 Ingredients 

1 Tbsp. Coconut or safflower oil
1 1/2 tsp. toasted sesame oil
2 cloves garlic 
1 Tbsp. grated fresh ginger
1 carrot, cut in thin diagonal slices 
1/2 c. broccoli florets
1/4 c. thin red bell pepper strips
1 small head bok choy, chopped into bite sized chunks
1 Tbsp. Low sodium soy sauce

Directions


In a large wok, heat oils on high.



This is the kind of coconut oil I use :) 


Add Garlic, Ginger, and Carrot. Cook, stirring well, for 1 minute.


Add Broccoli, stir, and cook for 5 min.


Add remaining veggies. Reduce heat to medium and cook until done.


Turn off heat; add Low Sodium Soy Sauce. Stir well, and enjoy!

Mashed Cauliflower

Sorry it's been a while :0) Just been busy being a mom :) Here's a healthy alternative to mashed potatoes.

Mashed Cauliflower

What you need-

1 large head of cauliflower, cut into florets

3 cups of chicken stock

2Tbsp butter

What to do-

  • Place cauliflower in a medium shallow pot or pan
  •  Add stock, cover and place pot over high heat
  • Bring to boil, reduce heat to simmer, cover and cook for 10 min.
  • Remove cover, raise heat to medium high and allow broth to reduce by half, about 2 min.
  • Cut the 2 Tbsp of butter into pieces and smash with a masher to same consistency as desired for mashed potatoes.

Chocolate Lava Cake

This is my husband's favorite dessert when we go out to eat, so I decided to try it at home. I was a bit nervous when he was trying it, but it got the thumbs up!! So happy :) I don't have any pictures of this one though.

All that you need is a box of chocolate cake mix ( also whatever you need for the cake mix)
Tub of chocolate frosting

What to do

Make the cake like it says on the box

Add dollops of frosting throughout the cake mix, after you put it in a greased cake pan.

Follow the directions on the cake box for the baking times.

This is such an easy thing to make.

Make sure you serve it warm :) 

Chicken Enchiladas in a Slow Cooker

So this one I just put together one day. It was a busy day and I knew I wouldn't want to cook dinner when I got home. So I was just going to throw some chicken and and cream of chicken in the crockpot and call it good. I went to the fridge to get out the chicken I saw some cream cheese that was getting ready to expire so I thought why not, and added that too. When I got home and looked at the chicken in the crockpot, it looked like the start to an enchilada sauce. So I added corn, green chilis, and some olives. I would have added some beans if I knew I was going to make this. It started to smell so good!! And it turned out fantastic!! It was also good as leftovers, on blue tortilla chips!! Hope you like it as much as we did!! Best thing about this you can add as many things as you want!!



Ingredients...

2 lbs of chicken breast
1 can of cream of chicken
8oz of cream cheese
1 can of corn
1 can of green chilis
1 can of diced olives
Tortillas

Directions...

1. Put chicken, soup, and cream cheese in a slow cooker on low for 8-10 hours or on high for 4-5 hours.
2. For the last 30 minutes of cook time add the rest of the ingredients to the slow cooker.
3. Then you can serve as an enchilada or some nachos, they both taste great!
4. You can add salsa, cheese and whatever else you like to put on your enchiladas.

Serve hot, and enjoy!!


Hearty Greens with Garlic

I love trying new things! I have never tried Kale before, I didn't even think it was edible. The first time I saw kale was when I worked for a food place and we put it in between all of the different foods when we had buffets, I just thought it was there to make your food look pretty. It turns out it is very healthy for you. Try this if you don't like the kale in it, try another type of green.

 
Hearty Greens with Garlic
Serves 6-8
What You'll Need:
1 1/2 pounds hearty greens, sliced thinly (we like kale or Swiss chard, but collards or beet greens are great alternatives)
1 pound baby spinach
3 tablespoons extra-virgin olive oil
8 cloves garlic, thinly sliced
Salt
Optional: 1/2 teaspoon red pepper flakes
What to Do:
1. Heat oil and garlic in a large skillet over medium-low heat. Cook until the garlic is golden around the edges, 8 to 10 minutes. Remove garlic from skillet and set aside (so it doesn't burn).
2. Add hearty greens to the pan, cover, and cook until tender (about 10 minutes).
3. Add spinach and season with salt and red pepper flakes to taste.
4. Cook until spinach wilts, stirring frequently (about a minute). Return garlic to pan and stir.
