Sorry it's been a while :0) Just been busy being a mom :) Here's a healthy alternative to mashed potatoes.
Mashed Cauliflower
What you need-
1 large head of cauliflower, cut into florets
3 cups of chicken stock
2Tbsp butter
What to do-
- Place cauliflower in a medium shallow pot or pan
- Add stock, cover and place pot over high heat
- Bring to boil, reduce heat to simmer, cover and cook for 10 min.
- Remove cover, raise heat to medium high and allow broth to reduce by half, about 2 min.
- Cut the 2 Tbsp of butter into pieces and smash with a masher to same consistency as desired for mashed potatoes.
